Wagyu A5 at the omakase counter: three preparations across three sets

Miyako uses genuine Wagyu A5 with a certificate of origin. KIKU and TSUKI include one wagyu nigiri, MIYABI includes two.

Miyako uses genuine Wagyu A5 with a certificate of origin. A5 is a grade on the Japanese scale, not the name of a region. The letter A is the top grade for meat yield, and the number 5 is the top grade for meat quality.

Wagyu in each set

KIKU and TSUKI include one piece of Wagyu A5 nigiri, near the end of the nigiri course, after the uni.

MIYABI includes two pieces, prepared two ways. The first is A5 Wagyu Uni Caviar, wagyu topped with sea urchin and sturgeon caviar. The second is Wagyu onsen, wagyu served with an onsen egg.
