MIYABI 雅: the 3,000,000 VND set with kinmedai, baigai and two wagyu pieces
The third autumn set has three slices of sashimi and nine nigiri, including kinmedai, baigai and Wagyu A5 prepared two ways.

MIYABI, written 雅 and meaning elegance, is the third set and the one with the most ingredients of its own on the autumn omakase menu. It is 3,000,000 VND per guest and served at all three seatings, 12:00, 18:30 and 20:30.
The menu, in the order it reaches the counter
The meal opens with sake and an appetizer of mozuku (brown seaweed). The sashimi course has three slices instead of two: hotate (scallop), madai (red sea bream) and chutoro.
The nigiri course has nine pieces:
- Shima aji — striped jack
- Kinmedai — splendid alfonsino
- Saba — Japanese mackerel
- Baigai — simmered Japanese whelk
- Akami — lean bluefin tuna
- Otoro — fatty tuna belly
- Uni — sea urchin
- A5 Wagyu Uni Caviar — wagyu with sea urchin and sturgeon caviar
- Wagyu onsen — wagyu with an onsen egg
The meal ends with soup and dessert.
How MIYABI differs from TSUKI
Three items appear only in MIYABI: hotate, kinmedai and baigai. Wagyu A5 appears twice, prepared two ways, one piece with uni and caviar and one with an onsen egg.
