KIKU 菊: the 1,000,000 VND omakase set that opens autumn

The first of three autumn omakase sets: two slices of sashimi, seven pieces in the nigiri course, then soup and dessert. 1,000,000 VND per guest.

KIKU, written 菊 and meaning chrysanthemum, is the first of the three omakase sets Miyako serves this autumn. The name comes from the chrysanthemum carts that move through Hanoi's streets in September and October, and the set is 1,000,000 VND per guest.

The menu, in the order it reaches the counter

The meal opens with the appetizer of the day, which changes with what arrives that morning. Next come two slices of sashimi: madai (red sea bream) and chutoro, the medium-fatty belly of bluefin tuna.

The nigiri course has seven pieces:

  • Hamachi — yellowtail
  • Amaebi — sweet shrimp
  • Saba — Japanese mackerel
  • Chawanmushi — steamed egg custard with salmon roe
  • Otoro — fatty tuna belly
  • Uni — sea urchin
  • Wagyu A5

The meal ends with soup and dessert.

Reservations

KIKU is served at all three seatings, 12:00, 18:30 and 20:30, at a 12-seat counter. Each booking takes up to 6 guests, up to 60 days ahead and no later than 3 hours before the start time.
